Recipe: Roasted Pumpkin Seeds

Halloween is fast approaching; many celebrate this holiday by crafting Jack-o'-Lanterns. This traditional Halloween lantern consists of a hollow pumpkin with facial features carved out.

Here is a simple recipe to use the leftover insides of your pumpkin:

Roasted Pumpkin Seeds

3 cups pumpkin seeds

2 tbsp vegetable oil

1 tsp salt

Wash seeds and remove pumpkin residue. Pat dry with a towel.

Spread on baking sheet and let dry for 1-2 hours.

Toss seeds with oil and salt.

Spread seeds over a baking sheet lined with parchment paper.

Bake at 350°F for 15-20 minutes, until crisp and lightly browned.
